Two Deliciously Easy Apple Recipes for Fall - What a Good Day (1)

With fall and cooler weather our thoughts start turning to the taste of delicious fall apples. There are so many wonderful recipes that can be made with apples. Of course, apple pie always comes to mind, but sometimes we just don’t have the time to get that done. So, in keeping things simple and easy, here are two great apple recipe substitutes that are simple to do and will satisfy your apple craving without all the work of baking a pie.

Recipe One: Heavenly Apple Dumplings

This recipe is so simple and truly heavenly!

  • 1 Granny Smith apple
  • 1 package crescent rolls
  • 1 cup sugar
  • 1/2 stick of butter
  • 1/2 teaspoon of vanilla flavoring (optional)
  • 1/2 can of soda (like Sprite, Ginger Ale, or Mountain Dew)
  • Cinnamon

Directions and Tips:

  1. Preheat oven to 350 degrees.
  2. Lightly spray the bottom of a 9 x 13 baking dish with Pam. (For these pictures, I used an 8 x 8 baking dish and it worked fine. I do think I prefer the 9 x 13 though.)
  3. Wash, peel, core, and cut apple into 8 slices.
  4. Wrap each slice of apple in a section of the crescent roll dough and place in the baking dish.
  5. Melt the butter and add the sugar, vanilla, and half can of soda and stir together. I used Sprite but the others work well too.
  6. Pour mixture over the apple/crescent rolls.
  7. Sprinkle with cinnamon as desired.
  8. Bake for 30 minutes.
  9. Serve warm with a scoop of vanilla ice cream. So delicious!

Recipe Two: Easiest Baked Apples

This is a great side to serve with pork chops or chicken dishes.

Ingredients:

  • Apples
  • Sugar or Splenda
  • Cinnamon
  • Water
  • Ice cream for topping (if desired)

Directions and Tips:

  1. You’ll need 3 to 4 large apples of your choice or 6 or so small apples. Different apples are good for different purposes. If you are unsure about what kind of apples you want to use check out this printable chart that outlines the best uses for different apples (baking, eating, salad, applesauce, cooking, drying, etc.) I really like Gala or Fuji for this recipe.
  2. Preheat oven to 350 degrees.
  3. Lightly spray the bottom of an 8 x 8 glass baking dish with some Pam.
  4. Wash, peel, cut, core, and slice the apples into the baking dish.
  5. Sprinkle with about 1/4 cup of sugar. (I use Splenda to save on calories but I use 1/8 rounded cup.) You can adjust to the level of sweetness you desire.
  6. Sprinkle with cinnamon to your liking.
  7. Add 2 to 3 tablespoons of water around the edges.
  8. Cover with foil and bake for 45 minutes or until apples are soft.
  9. Enjoy warm. Top with a scoop of ice cream to make it extra good!

Heavenly Apple Dumplings

These easy apple dumplings served with a scoop of vanilla ice cream will have you coming back for more!

Ingredients

These simple baked apples will satisfy your craving for a deliciously sweet apple dish!

  • 4 large apples (stronger flavors are better)
  • 1/4 cup sugar (or 1/8 cup Splenda). Add more for sweeter dish.
  • 3 tbsp. water
  • sprinkle cinnamon as desired

Instructions

  • Preheat oven to 350 degrees.

  • Lightly spray the bottom of an 8 x 8 glass baking dish with Pam.

  • Wash, peel, cut, core, and slice the apples into the baking dish.

  • Sprinkle sugar (or Splenda) evenly over the sliced apples. (Adjust to your level of desired sweetness.)

  • Add 3 tablespoons of water over the apples.

  • Sprinkle cinnamon as desired over the apples.

  • Cover with foil and bake for 45 minutes or until apples are soft.

  • Serve warm with a scoop of vanilla ice cream if desired.
